Baking bread

There used to be an amazing Belgian bakery where I live, which had some of the best breads I’ve ever tried. And for some reason all bread was done with spelt flour. As with many other small businesses, it closed during the pandemic. Maybe the business could not work remotely, maybe they moved back to Belgium. But I’ve never had decent bread since.

Which took me to the think, maybe I should bake my own?

I’ve been decently successful doing baguettes, and I even found a no mess 5 minute recipe that is pretty tasty, but never as good as what that bakery did.

Last week I finally tried baking with spelt, just a mix of regular strong flour and spelt and well, it was’t great. Goes to show that knowing what you are doing is more important than the ingredients. 😅

Generally I don’t think I have the patience to bake good bread, but I’m hoping one day I’ll manage to do something decent enough so I don’t have to just remember what good bread tastes. Or go to another country to actually have good bread.
